Our History

Built inside an old mill from the 1520s, Molin Vecio is set in a fascinating, fairy-tale location surrounded by the greenery and clear waters of the Risorgive.

Inside you will find lovely sitting rooms with fireplaces and stoves, but also large rooms for groups and weddings. In the summer you can dine by the lake under our gazebo, stroll through the “Brolo” (orchard) in search of forgotten fruit plants, and visit our vegetable garden where you can find more than 100 types of herbs that we continuously use in our cooking.

The mill’s natural surroundings allow us to work in a setting that is just right for us. There is room for the hands and the mind to live together, flavouring and tasting the slow flow of seasons, adding value to the typical, culinary specialities.

Water tirelessly nourishes the wheel, scaling the rhythms of time that seem to have stopped here. Our work is also a philosophy of life that highlights substance over appearance, and brings rest to stress. The colour green is an uniting, edible and visual element that always has a place in our research and what we have on offer

Our cuisine is varied and traditional, with dishes prepared respecting the seasonal cycles of the produce from our garden.

The restaurant offers reworked, traditional cuisine using wild and medicinal herbs, bread and pasta made with organic flours that are obtained directly from the grounding of cereals, and natural cooking.

Botanical Gardens Taste OVER 100 TYPES OF AROMATIC HERBS AND EDIBLE FLOWERS

Our restaurant has a medicinal garden with over 100 types of aromatic herbs and edible flowers.

We use many of these herbs in our dishes and in May we hold a party to celebrate them. The medicinal garden is open during the summer months.
In the park surrounding the restaurant you will also find the “brolo” (orchard) and a corner devoted to forgotten fruit plants (such as jujubes, loquats, and marinele).
